Congrats on surviving Monday, everyone! Dinner tonight was tasty and filling and full of omega-3s. All things good and amazing in the world. I used salmon, but feel free to use any other fish fillet that you prefer. I used this recipe as inspiration, simplifying it based on what I had on hand.
You’ll need:
- fish fillet
- EVOO
- salt and pepper
- parchment paper
- asparagus
- scallions
1. Preheat your oven to 400 degrees. Lay a thawed fish fillet on a piece of parchment paper (which isn’t the same as wax paper. don’t be confused). Sprinkle salt (or Adobo, if you’re cool) and lemon pepper on the fish.
2. Chop asparagus into inch long chunks and dice up some scallions (which are apparently the same as green onions. The things you learn….)
4. And fold it all up into a cute, little packet. Awww….
5. Cook on a low rack of the oven for 25 minutes.
6. Open the packet. Don’t burn your fingers. Serve and enjoy!
I roasted some red potatoes as a side. Super tasty. Olive oil. Adobo. Cooked at 400 degrees for 40ish minutes. Yum.

Supper for me this evening was actually an apple with carmal dip. Most evenings it’s a sandwich. Usually have my big meal at noon.
I’ve heard that’s the better way to go for your digestive system. Unfortunately, with the way lunch works, I just don’t have that kind of time…. Apple with caramel sounds super tasty, though
We had dinner at a friend’s – yummy baked parmesan chicken, mashed potatoes, steamed broccoli and the horribly tasty cheat-treat of chocolate chip pound cake. MMMM! Oh – can’t forget that tasty glass of vino.
I love being a grown up.
