St. Patrick’s Day

Happy St. Patrick’s Day! May the luck ‘o the Irish be with you.

Did you have a good weekend? Mine was just swell. We spent St. Patrick’s Day with friends, eating corned beef and cabbage and Irish soda bread, chasing it down with a glass of Guinness. Tasty deliciousness! I volunteered to bring something sweet, so I hunted around the blog world for a fun Irish-themed dessert. I struck gold when I found Irish Car Bomb Cupcakes.

Just because St. Patty’s Day has come and gone for another year, doesn’t mean that you can’t make these delicious little cupcakes. Gather up your Guinness, Bailey’s and chocolate, and have at it!

The centers of the cupcakes are filled with a chocolate whiskey ganache. Simply cut out a hole, fill with tastiness, and frost.

Top with your favorite color of sprinkles (or don’t). These can easily be made 2 or 3 days ahead, stored in the fridge, and served.
