Noodles of the homemade variety

I will not claim to be an expert on the noodle-making front. Far from it, in reality. But, after a couple of trail runs fails, I feel like I can, with a modicum of confidence, share with you what I’ve discovered.

In theory, making noodles is very easy. In fact, you could probably do it right now with the items that you have in your cupboard. I’m not going to call this easy, but I will call it doable. Definitely doable.

Without further ado, grab your ingredients: flour, 1 egg, olive oil, salt, and water.

1. Dump 1 cup of flour on the counter, and make it into a volcano. Like you’re 5 again. Crack an egg into the middle.

2. On the top, drizzle 1 Tbs. olive oil and sprinkle 1/2 tsp. salt.

3. Using a fork, start to cut the egg into the flour. Do your best. It’s going to be a mess.

4. You’ll probably need to add some water in order to get it all to mix up.You’ll need somewhere between 2 and 4 Tbs of water, added 1 Tbs at a time, as needed.

5. Keep mixing (feel free to use your fingers to knead if that sounds easier) until the dough forms a ball. I’m told that you don’t want to over-work the dough. Once it forms a ball, it’s done; don’t keep kneading. It should be pliable, but not sticky.

6. Take half of the dough ball, and roll it out. The thinner the better, as the noodles will absorb water and swell slightly when you cook them.

7. Using a pastry cutter (a pizza cutter works just as well!), cut your dough into noodles of desired shape and size.

8. Cook your noodles! No need to let them dry, drop them straight into a pot of boiling water or soup. The noodles only need 3 to 5 minutes to cook all the way through, so if you’re making soup, you can add them at the very last minute.

Pea Soup is good for the soul

Sometimes you get sick. And that just stinks.

Kleenex. Soup. Cold and Sinus medicine. Tea. More Kleenex. Who has time to be sick? Over-rated.

When I’m sick, I want to consume two things: tea and soup. I know that everyone says that they’re good for you, but are they actually? Is it going to make me get better any faster, or does it just feel good to consume hot liquid? Either way, I’m fine with it. Give me my tea and my soup. Just not in the same container.

This recipe comes from Heidi, the lovely woman behind the recipes and the camera over at 101 Cookbooks. She has a lovely, simple recipe for vegetarian split pea soup.¬† If you’re more of a give-me-a-ham-bone-in-my-pea-soup kind of person, here’s the recipe for you.

The best part about this recipe? Short essential ingredients list. Really, all you need to make this bowl of deliciousness happen are:

  • split peas
  • 2 onions
  • water

I would recommend following Heidi’s recipe, and then adding salt and pepper to suit your tastes. It might just be my poor, sick taste buds, but I found it a bit bland without some additional salt and pepper.

The best part about a pot of soup? Gobs of leftovers!

Veggie Fajita

This basic recipe got me through college. It takes about 10 minutes. It’s cheap. And it’s nutritious.

What you’ll need:

  • Chopped veggies (or a frozen veggie blend). I used Kroger’s 3 pepper and onion blend.
  • Olive Oil
  • Spices (sea salt, cumin, and fajita seasoning)
  • Garlic-1 clove, or the equivalent of minced garlic
  • Tortilla shell of choice

In addition, you could add mushrooms, salsa, sour cream, etc….whatever your little, hungry heart desires.

Y’all ready for this? OK, sautee up your veggies of choice in a skillet with the olive oil and spices.

I decided I wanted mushrooms and garlic at the last minute. It was a great choice, and one I recommended. Since they were fresh, and the above veggies were frozen, I sauteed them second.

Put a tortilla in the microwave between two sheets of paper towel for 15 seconds, then plate it up, and put your toppings on.

Seriously. So easy. So customizable. You could add more and/or different veggies. You cuold add meat. You could change the spices. Be warned: don’t make it too juicy, because then it just oozes everywhere, and that’s not fun. No matter what, though, you can’t really go wrong with this one!
